These quick treats are really easy to make and not too messy!
Here’s what I did:
Pre-heat oven to 190°C,
or an appropriate equivalent for your oven.
In a large bowl, mix 175g self-raising flour, 125g butter,
130g caster sugar, 150g chocolate chips, 1 large egg,
and 1 tsp vanilla essence until combined to a sticky paste.
You could also include a little cocoa for that double-chocolate flavour.
Grease 2 baking trays (so you can leave the cookies room to expand).
I spaced out 6 cookies on each tray.
Bake for about 10 minutes.
Cookies will appear slightly soft when removed from the oven.
They will harden as they cool.
I’ve made the mistake of leaving them in too long before!
This makes about 12 medium-large cookies.
Store in an air-tight container, and enjoy!
